The ribs that we serve at #eizakaya are often said to be particularly tasty. The reason for this is the secret blend of 9 spices I use is toasted and freshly ground every time I make them. I don’t use an electrical grinder either. Instead I harness my dogs to some heavy granite stones and whip them with my leather belt to achieve a fine powder. They are rewarded by being allowed to lick my feet clean when I return home for work.
